Chia Pudding Parfaits

Pudding Base:

– 1/4 c chia seeds

– 1 c almond milk (or any other nut, soy, rice or hemp milk)

– 2 Teaspoons of Maple Syrup (or agave, stevia, rice malt)

* For Vanilla Pudding:

– add 1/2 Teaspoon of Vanilla Extract

add fruit or berries, vanilla beans, oats, nuts

* For Chocolate Pudding:

–  add a tablespoon of raw cacao and/or use chocolate almond milk.

DIRECTIONS:

Combine all of the ingredients, in the order listed, and blend with a whisk until smooth. Cover and place in the fridge for at least 3-4 hours, preferably overnight. Serve when ready as regular pudding. When wrapped tight, it should last in your fridge for 3-4 days. If you’re wanting this as an on-the-go snack for work or little one’s lunchbox, it travels well as long as its kept out of the sun and should last about 4 hours when not refrigerated.

This recipe is so customizable you’ll instantly fall in love! It makes an excellent after-dinner dessert, a hearty breakfast or even a filling on-the-go snack. You can literally make hundreds of different parfaits with just a basic vanilla or chocolate base by adding fruit, berries, muesli, nuts, cacao nibs, nut butters, coconut, pumpkin….the possibilities are endless!
