Gluten-Free Open Vegan Lasagna

Layer Prep:

Boil two vegan gluten free lasagne sheets

Layer one: 

Place one lasagne sheet down. Fry onion, garlic, mushroom and fresh spinach together. Flavour with nutmeg, salt and pepper.

Layer Two: 

Mix oatly fraiche or other plant based fraiche together with capers

Layer three: One Lasagne Sheet. On the top: Lemon Pesto, Finely chopped almonds, lemon juice, agave syrup, olive oil.
