To me, one of the best treats around is ice cream, especially flavors that scream summer. One of those favorite flavors is Key Lime Pie.
However, my tummy isn’t a fan of all that dairy and the refined sugars & saturated fat that come along with it too can be bad for your health. So I’ve found a way to get the rich and creamy taste I love by using the texture of something a little unexpected – AVOCADO!
To make my yummy Lime-oacdo Ice Cream you’ll need:
◦ 4 ripe organic Avocados (peeled & pitted),
◦ ½ can of light organic Coconut Milk
◦ The juice of 4 – 5 organic Limes,
◦ 2 tbsp of Raw Honey,
◦ 1 organic Vanilla Bean (seeds only)
◦ a food processor (or blender)
First, combine all of the ingredients in a food processor and blend until smooth. Then, fill a sealable bowl with the creamy mixture and place in the freezer for at least 4 hours to set. Seriously, it’s THAT EASY! Need a great on-the-go treat? Ditch the bowl and instead fill popsicle molds like these! Add carob chips, cardamon, berries or even thinly sliced lime to make it extra special.
As I’ve mentioned before, filled with cholesterol-fighting good fats, omega-3s and 60% more potassium than bananas, Avocados are also high in fiber and an excellent source of zinc, iron and even calcium!
And there you have it, A tasty treat that’s vegan, dairy-free, gluten-free and made from a super fruit that’s super delicious…and without all of the gut gurgles or guilt! Buon Appetito!
