Rethink Your Smoothie ‘Cup’

32342918766It’s clear we are all about smoothies these days. Whether it’s Lime Chili Mango Madness, a new take on the Green Monster or the minty new take on the vanilla blueberry smoothie (seen below) we’re all about our blended bunch of superfoods. Taking a cue from our favorite TV pup, Scooby Doo and his Scooby snacks, we’ve revamped our love of smoothies by making them into Smoothie Snacks! Ready to get all your superfood smoothie goodness in a convenient take-away cup? Then Lets Do The DIY Thang, shall we? First up, you’ll need the recipe for our Minty Fresh Vanilla Blue Smoothie.

  • 2 cups fresh or frozen blueberries
  • 1 + 1/2 cups hemp, brown rice, almond or other milk beverage of choice
  • 1 cup plain Greek yogurt
  • 1/3 cup raw almonds
  • 2 tsp natural vanilla essence
  • 2 Tbsp blackstrap molasses, pure maple syrup or honey
  • 10 or so mint leaves

Combine the items in a blender and mix until smooth. Then grab your 12 cup muffin tin and fill with SILICONE cupcake liners. (SOOO much easier than paper and wont compromise the integrity of your frozen smoothie cups upon removal) Then pop the muffin tin into the freezer overnight. By morning, your freshly frozen smoothie cups will be ready to kick start the day off right. As a new convenient twist, we inserted popsicle sticks into the tops of the liners before freezing them to make our smoothie snacks into on-the-go cups. You can either enjoy them as a delicious frozen smoothie snack or pop a few cups into the blender with 3/4 c of Almond Milk or Coconut water to resmoothi-tize them. Either way, you cant go wrong with this ridiculously easy, fun and tasty way to get your super healthy on. We think even Scooby would approve, paws down.

  2. This is brilliant!! I love smoothies but hate measuring everything out in the mornings! (Not to mention I don’t measure well in the mornings in general) This is perfect! And sounds like a good snack for kids too! You could get those little popsicle molds! healthier than sugared up popsicles!
