In fact, this fall flavor is so popular that a facebook page campaign built to determine which city would get to sip the pun’kin sizzzurb first became so heavily hit with traffic it crashed within an hour of it’s release. Like the Pitbull enthusiasts who got him to perform at a Walmart in Alaska, the Pumpkin Passionates of the nation have clearly spoken. But to traditionalists like us, despite appreciating the pumpkin’s transcendance into the reaches of lattes and spice syrups, we will always prefer to keep it classy in OG style pies, cakes, and cookies galore. On that note, we’re also never ones to shy away from repurposed challenge, so in today’s post we bring you a healthier alternative to traditional pumpkin pie. Creamy, dreamy, and filled with pumpkin-y spice flavor, Pumpkin Cheesecake Mousse is soon to be a protein packed staple at our Thanksgiving table. First up you’ll need the following items: Blender (MUY IMPORTANTE), 1 cup Low-Fat Cottage Cheese, 1/2 cup Pumpkin Puree, 1/2 cup Milk, 1 tbs of instant butterscotch pudding mix, 1/2 tsp Pumpkin Pie Spice, 1/2 tsp Cinnamon and 3-6 packets or tsp’s worth of your desired sweetener. Place all of the ingredients into the blender and mix until completely smooth. Cover and chill in the fridge for at least one hour, garnishing with gingersnaps or nutmeg if you so choose. We love this recipe not only for it’s delicious pumpkin content but also for its unbelievable simplicity and versatility. Mix it up by using vanilla pudding or cut more calories by using non-fat cottage cheese and soy milk or sugar-free pudding mix. No matter how you scoop it, this low-fat, guilt-free treat is Pumpkin Passion Personified and the best part? No need to log on and ‘like’ or fight through the huddled masses to enjoy it.
